Recipe of the week: Chicken and Dumplings
The weather is changing and evenings are getting cooler., so it is time for some stick to your bones good ole southern comfort food! I found Anne's pastry strips in the frozen section of the grocery store, and love them in this dish. If you can't find them you can substitute biscuits, just roll them out and cut them into squares. The rich gravy matched with the hearty chicken and delicate pastry is the perfect dinner on a cold night after a hard practice. Pair with some crusty bread and a fresh salad to round out this southern staple!
Crock Pot meals are a great go to when you have time to set it and forget it.
Remember when cooking with pork and beef to not skip searing the meat before adding it to your crock-pot; you will not be sorry as this will add a depth of flavor to your dishes that is not to be missed.
Also invest in a crock-pot that has a timer that switches to warm when complete. This is essential to prevent overcooking, because I've never lost track of time while cooking said no mom ever!
